Detailed preparation advice
Soak overnight. Rinse, place in a pan of cold water and bring to the boil for 1 minute, then drain (this step helps to ensure that the flageolet beans are well digested). Continue cooking over a low heat in a large volume of water for 40 to 60 minutes. You can add herbs or kombu seaweed to the cooking water.
